Leading up to the big day, there are a few “women only” occasions that call for a light and elegant menu. Whether you are the bride hosting a small fete to honor and thank your bridesmaids and other close women friends and family, or you are a bridal shower hostess, I think you’ll enjoy two of my favorite fish mousse recipes.

Being the fanatic for details that I am, I always consider how the food will look on the dishes I am using. I make an effort to choose food that is both delicious and visually complementary to my theme and color palette. And since there are few entrees that offer this subtle pink hue, salmon mousse is a shoo-in for a delicately designed affair.

In addition to its delicious flavor, I love salmon mousse for its color and shape created by your choice of timbales. It’s an easy recipe that gives the impression that you spent all day in the kitchen. The tangy verde sauce is the perfect foil and looks pretty on the plate.

White, scallop mousse is a wonderful alternative to salmon. Or if you’re feeling ambitious, offer them both. Here I’ve served the mousses with petit pois and baguette. Follow with a lovely cake that fits your theme or a simple sorbet, and you’ll have an enchanting meal for a special occasion.

Choosing objects that are small and integrating them into your tablescape is a beautiful way to carry out your theme.
